Yesterday I created my favorite dinner for my mother. It has black beans, cooked with sauteed garlic and caramelized onion. On a bed of rice cooked with cilantro, lime, onion and a dash of salt. Believe me, this alone is to die for!
Next there is the pork that is slow roasted for hours in a special slightly sweet concoction that eventually culminates in a lovely toasted color. I think my favorite part of all of this is that all this is placed on a bed of salad and topped with a touch of dressing and pico de gallo. The dressing is-of course-my favorite.
It is made with jalepenos and an entire bunch of cilantro making it green and a bit spicy. I like to put crushed red pepper on top too. Silly-I know-but it counters the sweet pork and cuts through the fat in the dressing.
As you can tell all this takes quite a while in the kitchen. Plus my mother made her famous cookies. This means that Crisco has once again found it's way into my house, and possibly margarine. As you can tell from my love for Real food, Simple food and Tasty food I tend not to have those things in my house.
But, I love my mum, and I would endure almost anything for the moment. She put up with me dragging her halfway across the country on Mother's Day so I could leave her with my kids. Brat that I am.
So, I'm hoping that the jet-lag won't interfere too much with getting in healthy food before the craziness of traveling starts all over again today. I will be traveling 5 hours once again today, as there is shuttling to airports to be done and we live in Smalltown Midbest. Add in two therapists, and I'm exhausted just thinking about it.

Wow. Yum. Now I want to lick the screen. Umm, momentous? Well, I finally pooped. And I went to a yoga class. And I'm going on my secret getaway tomorrow. And I miss you.

ReplyDeleteAs for "insurmountable," I'm not sure anything is, but our family's still dealing with my MIL's sudden health crisis: what began 2 months ago as emergency brain surgery for an aneurysm that was discovered by chance during her visit [http://www.soymamiymas.com/2010/03/are-you-spiritually-inclined.html] turned into ongoing complications from mini-strokes and diabetes, 3 more visits to the ER, 1 visit by the Paramedics, 4 hospital stays, a 2nd aneurysm, followed by a 2nd brain surgery . . . and, unfortunately, a full-blown stroke following that. To say that all our lives are up in the air right now is a very cheap use of a good cliche, but it's all I got right now.
